Greek Olives

Nothing better than snacking on a good bowl of olives.

When I make olives this is what I do.

First I get all the olives and rinse with warm water to wash off as much brine as possible and place them in a bowl.

Get together zest of one orange, extra virgin olive oil with sun dried peppers, 8 peppercorns, caraway seed and bay leaf.

Place those ingredients in a small pot and a couple cups of olive oil. Simmer the oil until you can start to smell the aromatics. Pour over olives and let cool. Net proceed to snack at will!
