Warm salads are a great add on to any meal.
They provide the deliciousness of all the vegetables and healthy goodies found in salads with the food temperature found in Entrees.
For this salad you will need :
Chicory Greens or any in Season Greens
Cantrell Mushrooms
Sesame Seeds
Balsamic Vinegar
Extra Virgin Olive Oil
Petimezi
Sesame seeds
salt and pepper and thyme
Toss the Cantrell mushrooms after you have cleaned them in a hot pan. Once they have started cooking and let most of their moisture out add some Extra Virgin Olive Oil and cook them for a few more minutes. Remove from the pan to prevent them from cooking further and drying out.
In a different pan roast the sesame seeds. Optionally you can roast them with honey, depending on how sweet you want your salad.
Create a dressing of Extra Virgin Olive Oil, Balsamic Vinegar and Petimezi of a ration 2 :1 : 1
Mix the chicory with the dressing, add the mushrooms and then the sesame seeds.
Salt and pepper and thyme to taste.
Serve warm either as a salad or as a side to any Entree.
